Viticulture

Family estate of 3.5 ha, located in Twann. Anne-Claire took over the property in 2016 (3rd generation), after her training as an oenological engineer in Changins. Biodynamic viticulture from the 2018 vintage. Soils worked every other row for 30 years. Manual weeding and weeding with a weeding machine. Hand-worked. Very steep slopes, difficult to mechanise. Approximately 7500 vines/ha.

Oenology

Whole bunch pressing. No pre-filtration. Aged on the lees for 6 months in tuns (dating from 1982). With malolactic fermentation. Annual production (3600 bottles).

Suggestions for accompaniment

Fillets of perch meunière - Arctic char with lemon butter - Hard cheeses.

Domain
Her career as an oenologist was preceded by studies in art history and sociology, which made her aware of the different cultural aspects of the profession. In order to preserve the heritage of this vineyard, she wishes to cultivate her vines entirely by hand. This philosophy also reflects the desire for sustainable production, supported by biodynamic considerations.
