Barbaresco Maria Adelaide, Bruno Rocca (jéroboam) - 2013

First produced in 2001 as a tribute to the 'mama', this selection cuvée is built on a majority of 'Rabajà' terroir. The pinnacle of the cellar, it is a Barbaresco which, like the great Burgundy wines, shines more by its refinement and complexity than by its muscle. A wine for laying down, with a firm structure, which will benefit from (very) long ageing.

Viticulture

Selection of the best vines on the estate, with a large base (over 75%) of Rabajà. The aim is to produce the greatest possible wine, in order to pay tribute to Bruno Rocca's mother.

Oenology

The vinification is relatively classic: maceration for about a week, then ageing in barrels and tuns for 15 to 18 months. Aged for 12 months in bt before marketing.

Suggestions for accompaniment

Veal tartare with a knife and a few slices of white truffle. Oven-roasted duck.
