Vin de la Sabla ®, Les Crêtes

La Sabla is the historic wine of the estate, produced since 1971 by the Charrère family, an emblematic Valle d'Aostan family that has done so much for local wine. The blend of native grapes here includes a little Barbera from Monferrato (Piedmont), where Costantino's wife is from. It has lovely notes of pepper, macerated cherries and liquorice. The palate is pulpy, spherical and brilliant. We love it!

Technique

Viticulture

This is the historic wine of the estate, produced for forty years (1971). It is classified as a table wine because the blend includes barbera from Monferrato, where Costantino Charrère's wife is from. Terroirs of La Sabla, Bufferia and Sazzé. Morainic and sandy soils on steep slopes. Altitude 650 m., western exposure, vines 20 to 70 years old. Planted at 8000 vines/ha, Guyot pruning. Harvest time: mid to late October.

Oenology

Vinification in temperature-controlled vats (28/30 OC). Long maceration (25 days). 12 months maturation in steel vats.

Suggestions for accompaniment

Brasato and polenta with Alpine Fontine - Veal shank "gremolata - Cannelloni with mushrooms.

Domain
The Domaine des Crêtes was founded in 1989 in Aymavilles by the charismatic Costantino Charrère, who is in a way the "father" of all the great Valle d'Aostan winegrowers. It is now run by his daughters, who represent the fifth generation of this family, which has always been involved in agricultural production in the most poly-cultural sense of the word. The vineyard covers 25 hectares along the Dora Baltea, which crosses the region like the Rhone in Valais, in the communes of St-Pierre, Aymavilles, Gressan, Sarre, Aosta and St-Christophe. It is unanimously the most (re-)known Valle d'Aostan domain in the world and we import it exclusively for Switzerland.
