Viticulture
Vines planted between 1988 and 2000. Saint Veran is made from two south-facing plots in the village of Prissé (En Bergeron and Montchanin) and one north-facing plot (En Combes) in the village of Davayé. The plots are located at an altitude of approximately 250 metres and have slopes of around 15%. The soil has a deep clay structure on a hard limestone subsoil. The vines are cultivated organically (Ecocert certification) and biodynamically.
Oenology
Manual harvesting. The Saint Véran is vinified in foudre (oval wooden containers of 45hL to 48hL) and in demi-muids of 500L. It is kept on the lees for nine to ten months before racking and preparation for bottling at the end of July.
Suggestions for accompaniment
River fish in foil - Sole with beurre blanc - Pan-fried scallops - Fresh or semi-dried goats from the Mâconnais.
