Pouilly-Fuissé Pierrefolle, Château des Rontets - 2018

From a vineyard located a few metres from the château and planted in the 1970s on a granite bedrock, this racy Chardonnay is aromatic, with notes of candied lemon, honeysuckle and praline; it surprises and charms on the palate with its rocky water crystallinity. This is without doubt the most original and lively wine of the estate!

Technique

Viticulture

All the vines are cultivated organically and the soil is fully tilled. The harvest is done by hand and in crates. The Pierrefolle parcel is located about 500 m from Clos Varambon, and was planted between 1970 and 1975 at 8800 vines/ha. The granitic parent rock, the silty soil and the east-facing exposure are the reasons for the differences between this cuvée and those produced in the Clos.

Oenology

Fermentation and ageing on the lees are carried out in recent 228 and 400L barrels. The wine is racked before the next harvest and bottled after 18 months of unfiltered ageing.

Suggestions for accompaniment

River fish in foil - Sole with beurre blanc - Pan-fried scallops - Fresh or semi-dried goats from the Mâconnais.
