Païen Réserve (savagnin), Histoire d'Enfer - 2020

This grape variety, also known as heïda or savagnin, produces a powerful, vinous wine, with a higher acidity than chardonnay, with a less pronounced but very subtle aromatic profile. Admirable when aged! Can be reminiscent of a great Chablis, but more vinous, thanks to its subtle aromas which evolve towards fern.

Oenology

Direct and gentle pressing. Static settling for 24 hours. Aged for 1 year in 600-litre barrels and 228-litre second passage barrels, then in vats for 5 months before bottling. No fining and filtration before bottling according to the lunar calendar to respect the organoleptic qualities of the wine.
