Viticulture
Fabbrica Pienza was founded in 2013 with the aim of creating wines with a distinctive organic identity. Pienza's climate is very similar to that of the Rhône Valley, warm and temperate. Rainfall is high throughout the year. The hilly terrain is reminiscent of the southern Rhône Valley, while the soils are more similar to the Crozes-Hermitage region. The soils are sandy-clay with a high cation exchange capacity, a good supply of active limestone, a high mineral salt content and numerous Pliocene and Quaternary marine deposits.
Oenology
Rigorous selection of vineyards fermented in two parts. First part: 5 selected vineyards fermented separately in micro-tanks with around 25% whole bunches, spontaneous fermentation, punching down only, pressing after around 30 days and bottling; second part: selection of 2 of the above vineyards, 20% whole bunches, spontaneous fermentation in a large tank, pumping over then punching down, around 60 days of fermentation/maceration, pressing in an uncoated concrete tank. The two parts aged for around 15 months before being blended in a large oak vat 3 months before bottling.
