Run by a very engaging duo, the Domaine du Loup Blanc makes perhaps the most refined and digestible wines in the Minervois. Their Régal is all about carignan and has a beautiful nose of blackcurrant and truffle. It is a long and subtle wine, built on fine tannins. A formidable wine for slow-cooked dishes and red meats. Viticulture

The Loup Blanc vineyard is a winegrowing operation located in the hamlet of Bize-Minervois on the border of the Aude and Hérault departments. The vines are planted around the hamlet, at the crossroads of the AOP St-Chinian, St-Jean de Minervois and Le Minervois, of which they are all part. Organic farming is certified. Clay and limestone soil for this cuvée, the vines are 20 to 100 years old, short pruned with two eyes.

Oenology

Green harvesting if necessary and manual collection in sorting boxes. Total destemming, crushing, manual punching of the cap, small pumping over, vatting for 15 to 21 days. Aged in concrete vats.
