This cuvée is produced in collaboration with Raymond Paccot. Two parcels are assembled: one belonging to him and which he cultivates, and one which is in fact the vineyard located in front of our buildings, in Gland. The latter is managed organically and, in the manner of the work done by Lalou Bize-Leroy in Burgundy or Laurent Vaillé at the Grange des Pères, we do not trim: the abundant foliage is just pulled back on the wire, without cutting the apex.
Aged in barrels for about 18 months.

Chicken supreme, lemongrass-ginger sauce - Cod royale with lentils and North African spices - Cheese.
