Viticulture

Known as "the pearl of the Cyclades", Tinos was not destined to produce great wines until the arrival of a visionary who had the intuition to produce great wines on an energetic granite terroir. Twenty years later, the wines of Clos Stegasta are not only among the great wines of the Aegean, but have their place in the concert of great wines of the world. Alexander Avatangelos, a philosopher and theologian by training, has a 10-hectare vineyard located in the centre-east of the island at an altitude of 400 metres. In order to preserve the beauty of the place, the vineyard is cultivated organically. The soil is sandy on a bed of granite.

Oenology

The grapes are pressed directly on arrival at the winery. Fermentation with indigenous yeasts. The wine is aged on its lees for two months.

Marinated fish - Zucchini flower fritters - Thin vegetable pie.
