Viticulture
This cuvée comes from an old virosed vine (planted in 1967) on granite soil. This means that the vines are affected by a disease and they produce only small bunches of grapes. Thus the ratio between the skin of the grape and the pulp is very high, much higher than on a classic Gamay. This is one of the explanations for the concentration of this wine!
Oenology
Traditional maceration for 3 weeks. Aged in vats. Vinification and bottling with little SO2.
