Technique
Viticulture
The vineyard is located on a plateau corresponding to the middle terrace of the Tarn. The terroir is made up of very fine gravelly soils. Certified organic farming.
Oenology
The musts were fermented at 18° C in vats. Fermentation was stopped by cold and filtration to avoid the use of too much sulphur. The wine obtained retains about 80 g/l of residual sugar and offers a very good balance. Aged in vats, with regular racking.
Suggestions for accompaniment
Aperitif • Tabbouleh • Courgette rolls with fresh goat cheese.
