Definition: Tries

Successive harvests of selected grapes, carried out during the harvest of grapes affected by noble rot and during late harvests. They are used in particular for the production of sweet wines (e.g. Sauternes). The successive sorting, which can involve up to ten passes through the vineyard, makes the harvest very costly.
