Sorting applies to all quality harvests and is carried out upon arrival at the winery in order to eliminate rotten, unripe grapes and other waste that is not top-quality fruit.
This newly designed table, with a vibrating apron, offers the advantage of combining the work of a vibrating drainer and a conventional sorting table. However, the quality of the work seems to be significantly lower than that of the two machines combined, but higher than that of a conventional table. The vibration of the stainless steel apron, with its forward tilt, guides the harvest to the exit and allows for better distribution of the product on the apron. The vibration brings the lightest parts to the surface, making it easier to detect impurities.
Selection of noble grapes: selection by several passes through the vineyard (successive sorting) of botrytised or passerillised grapes (see these terms). There may be numerous sorting operations, with the last grapes harvested after December. The harvesting costs and low yield significantly increase the cost price of this type of wine.
