All the choices that lead to the best quality. In terms of wine, these choices begin in the vineyard with selected plants (clonal or mass selection) planted in selected plots. During the harvest, the grapes are sorted (successive sorting in Sauternes, selection of noble grapes in Alsace, Beerenauslese in Germany and Austria, etc.), during vinification, selected yeasts and oak barrels from selected regions and logs are used. After ageing, the winemaker selects the vats to achieve the best blend.
