Definition: Saint Pierre

The New Testament recounts that, upon arriving in Capernaum, Jesus was asked to pay the census tax. He then told Saint Peter that he would extract a stater (gold coin) from the first fish caught, which would enable him to pay the tax. It was a fish caught by Saint Peter that bore the marks of the Saint's fingers on its sides. The Saint Pierre is a flat fish with a wide mouth, belonging to the Zeeidae family (from Zeus), hence its other name, the Zee. It is fished in shallow waters from Norway to the Mediterranean. It is one of the finest fish and therefore one of the most sought-after by top chefs.
