Definition: Retro-olfaction

Retro-nasal smell, i.e. from the back of the mouth, reaching the nasal cavities. By drawing in a little air to aerate the mouthful of wine, it is possible to increase the sensations of retro-olfaction. This important phase of tasting allows you to discover aromas in the mouth that you did not perceive during the olfactory phase, and which may be triggered by the influence of salivary enzymes.
