Appellation wine made from selected grapes, left to dry to produce Recioto di Soave DOC. The best grapes are chosen when they have reached the perfect stage of drying and preservation. They are pressed later than the others, and the must obtained has a high sugar concentration, producing a full-bodied wine with an excellent alcohol content. The must obtained is left to ferment for an indefinite period in small wooden barrels. Once fermentation is complete, determined by climatic conditions, the wine is filtered and returned to small wooden barrels. When the wine reaches its particular characteristics, it is bottled and left to age for about a year. It is now ready to be sold.
