Beaujolais region. Production area located at altitude (between 250 and 280 metres), about twenty kilometres south-west of Mâcon, more precisely within the communes of Chénas in the Rhône department and Romanèche-Thorins in Saône-et-Loire. Classified as an AOC cru in 1936. Area under production: just over 640 hectares. Black grape variety: Gamay. The incorporation of white grape varieties such as Aligoté, Chardonnay and Melon into the vineyards is permitted, provided that they do not exceed 15%. Vinified as red wine only. It can be kept for 5 years or more, depending on the vintage. Ideal serving temperature: between 14 and 15°C. Pair with: pâté de perdreaux (pâté made with young partridge), civet de lièvre (hare stew), boeuf bourguignon (beef bourguignon), poultry, leg of lamb, turkey with truffles or strong cheese.
