Back Burgundy region. Production area located about ten kilometres south-west of Dijon, more precisely within the municipalities of Chenôve, Couchey and Marsannay-La-Côte in the Côte-d'Or department. Classified as a communal AOC in 1987. Area under production: just over 210 hectares, of which just over 55 hectares are used to produce Marsannay rosé. The total area covered is 513 hectares. White grape varieties: Chardonnay and Pinot; grey: Pinot Beurot; black: Pinot Noir. To produce red wines, the incorporation of white and grey grape varieties such as Chardonnay and Pinot into the harvest is permitted, provided that they do not exceed 15%. Vinified into: white, rosé and red. It can be stored: 2 to 3 years for rosé; 3 to 10 years for white and red. Ideal serving temperature: between 8 and 10°C for white and rosé; between 14 and 16°C for red. Pair with: white with shellfish or crustaceans; red with rabbit with mustard.
