Back Mâconnais region. Production area: located within 43 municipalities in the Saône-et-Loire department, mostly between Tournus and Mâcon (part of it is also located south of Mâcon), on the right bank of the Saône. Classified as a regional AOC in 1937. Area under production: nearly 3,050 hectares. White grape varieties: 80% Chardonnay and Pinot. Vinified exclusively as white wine. Can be stored for 5 to 6 years. Ideal serving temperature: between 11 and 13°C. Pair with: cod in cream sauce, lemon sole fillets with sorrel, red mullet Catalan style, pork liver pâté, rabbit stew, chilled fennel soup, pepper steak or rabbit in cream sauce.
