Classified as a communal AOC with 28 premier crus in 1936. Area under production: nearly 400 hectares. The appellation covers a total of 446 hectares, 86 of which are classified as premier cru. Only red wine is produced. Grey grape varieties: Pinot Beurot; black grape varieties: Pinot Noir and Pinot Liébault. The incorporation of white and grey grape varieties such as Chardonnay and Pinots into the vineyards is permitted, provided that they do not exceed 15%. It can be stored for a very long time, from 5 to 15 years, or even longer depending on the premier cru and the vintage. Ideal serving temperature: between 12 and 14°C for a young wine; between 15 and 16°C for a slightly older wine. Pair with: game, coq au vin, stew, pikeperch prepared in red wine, veal grenadines with mushrooms or to accompany a strong cheese.
