Definition: Fousserage

"A well-tilled vineyard will benefit all year round," as the saying goes. This name was given to the first cultivation method after pruning. The hardened soil had to be turned over with a spade, turning the clod upside down, with the grass underneath and the roots on top. This was one of the most arduous tasks of the winegrowing year.
