Definition: Dolium

A large terracotta jar used by Roman winegrowers that could hold several hectolitres. The inside was coated with pitch before each harvest to ensure it was watertight. The dolia were buried in sand to keep them upright, then filled with fermenting must. The vinification process lasted several months, after which the wine was transferred to amphorae for storage and sale.
