A fatty membrane resembling a net, in which meat is rolled, thus preserving its flavour and tenderness. This thin fatty membrane surrounds the stomach of slaughtered animals, especially pigs. It is used to wrap sausage meat and make "crépinettes" and to hold together any minced meat during cooking.
