Back Appellation of the Burgundy region Côte de Beaune. Production area located north of Beaune, more precisely within the communes of Aloxe-Corton, Ladoix-Serrigny and Pernand-Vergelesses in the Côte d'Or department. Classified as an AOC grand cru in 1937. Area under production: just over 100 hectares. The total area covered is 160 hectares. White grape varieties: Chardonnay; grey: Pinot Beurot; black: Pinot and Pinot Liébault. The incorporation of a certain number of white and grey grape varieties such as Chardonnay and Pinots into the vineyards intended for producing red wines is still authorised, provided that they do not exceed 15%. A very small quantity is vinified as white wine, with the vast majority being vinified as red wine. It can be kept for 20 to 30 years, or even longer depending on the vintage. Ideal serving temperature: between 8 and 10°C for white; between 16 and 17°C for red. Pair with: red wine, duck à l'orange, hare or venison stew.
