Burgundy region of the Côte de Beaune. Production area located in the north-east near Beaune, more precisely within plots of land in the commune of Chorey-Lès-Beaune in the Côte d'Or department. Classified as a communal AOC in 1970. Area under production: nearly 134 hectares. The total area covered is 168 hectares. White grape varieties: Chardonnay and Pinot Blanc; grey: Pinot Beurot; black: Pinot Noir and Pinot Liébault. The incorporation of white and grey grape varieties such as Chardonnay and Pinots into the harvest intended for producing red wines is authorised provided that they do not exceed 15%. Vinified as white (small quantities) and red. It can generally be kept for quite a long time, from 3 to 8 years for white, a little longer for red. Ideal serving temperature: between 12 and 14°C for white; between 14 and 15°C for red. Pair with: white with a hot starter such as a pie, quiche, grilled or baked fish; red with a poultry fricassee or roast guinea fowl.
