Red wine can be stored for 4 to 10 years and white wine for 2 to 4 years. The ideal serving temperature for white wine is between 8 and 10°C and for red wine between 15 and 16°C. For the most powerful wines, allow them to breathe for about two hours before serving. Pair white wine with Atlantic fish in sauce, seafood, gizzard salad or white meat; pair red wine with pot-au-feu, stuffed shoulder of lamb, grilled or roasted red meat, or skewers with three meats (beef, chicken and lamb), or kidneys with mustard, or roast partridge, or wild rabbit stew, or grilled duck breast.
