A dessert created by a Belle Époque pastry chef based on Rue Bourdaloue in Paris, consisting of poached pear halves, vanilla frangipane cream and crushed macaroons. The bourdaloue tart consists of this filling on a tart base, and the bourdaloue mixture is used to accompany other poached fruits such as apricots or peaches.
