Potato variety. This is a pancake made with sliced potatoes cooked in butter in a special pan or in a covered sauté pan. "Pommes Annette" is a variation in which the potatoes are cut into julienne strips. Name of a potato dish created by Adolphe Dugléré and dedicated to Anna Deslions, a courtesan of the Second Empire who was a regular at the private salons of the "Café Anglais".
