It produces wines with relatively high acidity. It is meant to be consumed young. It is fruity and can reveal mineral notes in certain Burgundy terroirs. Aligoté is grown in Switzerland, mainly in the Geneva vineyards where it has become a speciality. It is also grown on a small scale in Valais and in the canton of Vaud. This lively wine has a more pronounced aromatic potential than Chasselas.
