Like the famous Château Rayas, the estate is lucky enough to have a large part of its old Châteauneuf vines (some of which are a hundred years old and planted with several grape varieties, including white ones!) on sandy terroirs, which make one dream: one on Le Rayas itself; one at the place called Le Pointu, which adjoins it; one called Guigasse, a stone's throw from Pignan; one on the terroir of Chapelle Saint-Georges; and one on the east side of La Crau.
Oenology
Hand-picked, traditional long vatting period of about 35 days in whole bunches. Aged in concrete vats.
Suggestions for accompaniment
Beef tartare • Lamb Crépinette with cumin and apricots • Truffled poulard.
