Viticulture
Second wine of Pibarnon. Restanques are the terraces on which the vines are planted. Made from the same terroir, between limestone and clay, but from slightly younger vines (8 to 12 years old), it is also more marked by Grenache. Surface area: 4 ha of hillside terraces at 200 m altitude. Yields of 35 hl/ha. Hand-harvested, in 20kg crates.
Oenology
Vinification in vats, using gravity. Total destemming. Daily punching down to extract fine skin tannins. Temperature control to preserve the aromas of fresh berries. Aged for 18 months, partly in new barrels from central France, the rest in oak tuns.
Suggestions for accompaniment
Veal grenadins with mushrooms - Rabbit skewers with tarragon - Risotto with boletus - Cheeses.
