Viticulture

Palmer covers 55 hectares in the commune of Cantenac, on a plateau of thin gravel from the Güntz era, situated at the top of the Margaux appellation ridges. The vines are planted at a very high density - 10,000 vines per hectare - and the soil is ploughed regularly.

Oenology

The grapes are placed in crates and sorted on a vibrating table. After destemming, the berries are crushed. The grapes ferment for 8 to 10 days, with daily pumping over. Maceration continues for a further 10 days. After malolactic fermentation, the wines are racked into barrels for ageing for between 18 and 21 months. 50 to 60% new oak for Château Palmer and 25 to 40% for Alter Ego.
