Viticulture
Château Haut Nouchet cultivates 27 hectares of vines. They are planted on a soil of Günzian gravel on a clay-limestone substratum, with an average age of 25 years in 2010.
Oenology
The grapes are harvested by hand and sorted three times, first in the vineyard and then before and after de-stemming, to ensure that only healthy, ripe fruit is vinified. The vinification, under the leadership of Stéphane Derenoncourt, begins in temperature-controlled stainless steel vats and ends with 12 months of maturation in oak barrels, one-third of which are renewed each year.
