Viticulture
An old estate located on the outskirts of Bordeaux, Haut Bailly was created in the 17th century by wine merchants Firmin Le Bailly and Nicolas de Leuvarde. The vineyard covers almost 30 hectares and is planted on unique soil composed of sand mixed with tertiary gravel and a subsoil of faluns. The average age of the vines is 35 years. During the harvest, an initial sorting is carried out in the vineyard, followed by two further sorts, one of which takes place after destemming.
Oenology
Vinification takes place in cement vats, while blending and bottling are carried out in stainless steel vats. Alcoholic fermentation lasts 8 to 10 days, but the vats are left to macerate for 3 weeks. After racking, malolactic fermentation takes place in barrels. Three cellars, on three floors, house the ageing process, which lasts 18 months, in barrels that are renewed each year at a rate of 50% to 65%.
