Viticulture

Gravelly-sandy, clay and limestone soil. Production area: 29 hectares (33 hectares planted). Average age of vines: 18 years. Double Guyot pruning. Planting density: 8,000 vines per hectare. Target yield: 45 hl/ha. Oenologist: Éric Boissenot. Capbern is another Calon-Ségur estate but is neither a 2nd nor a 3rd wine.

Oenology

Hand-picked, 1st inspection during the harvest, vibrating de-stemmer, manual sorting table. Vinification in temperature-controlled stainless steel truncated-cone vats. Vatting period of 18 to 21 days. Aged for 18 months, 60% in new barrels, the rest in one-wine barrels. Fining with egg white. Average annual production: around 80,000 bottles.
