Viticulture
The vines are located at the top of a limestone plateau, with the rock outcropping beneath the red clay. Controlled grassing and tillage. Sustainable viticulture. Continuous vineyard renewal programme: uprooting, replanting, massal selection planting at higher density. Numerous manual operations: de-budding, leaf thinning, thinning out. Surface area: 6.36 ha (5 ha in production).
Oenology
Whole berry fermentation in concrete vats, punching down and pumping over. Aged for 16-18 months in 225 L and 500 L barrels, half of which are renewed.
