The Vesselle family attaches great importance to the environment, by reinforcing the natural defences of the vine in order to limit treatments. Since 2000, they have been optimising the working of the soil and the use of grass to avoid using weedkillers. All her harvest is vinified, handled and marketed in Bouzy by her own care. The harvest in Champagne is necessarily manual; the grapes are immediately pressed in 2 pneumatic presses. After a meticulous settling, the fermentations are carried out in complete serenity, thanks to thermo-regulated vats. The blends are made in order to respect both the character...
