Viticulture

This cuvée is dedicated to an ancestor of the family. It is made from the oldest GC plots in the Côte des Blancs.

Oenology

It is kept until maturity in oak barrels. Inspired by the Solera method, since 2006, at each bottling, the family takes wine from the barrel and completes it with the year's harvest, which brings a beautiful aromatic richness and an amazing complexity.

Domain

In 1910, Emile Gilmert started to sell a few bottles under his name. His son Marcel succeeded him in 1920. In the 1950s, the union of Colette Gilmert and Robert Bonnet gave birth to the eponymous estate. Their son Denis, and then their granddaughters, continued the family adventure and set out to produce refined champagnes in keeping with tradition. Here, the terroirs are cultivated with a reasoned approach, in order to protect the environment. The vinification is an important stage to which the family pays a lot of attention. The vat room, which is entirely thermo-regulated, allows for precise control of the fermentation process. The vinification in barrels gives a unique patina to the wines. Ageing on laths in the cellar allows the inimitable aromas of chardonnay on chalk to develop with great purity.
