Viticulture
Surface area: 1.54 hectares. Soil type: chalky marl on Kimmeridgian. Location and exposure: situated on a hillside in the commune of Chablis, the 1er Cru La Forêt differs from our 1er Cru Montmains parcel in that it is situated on a higher level of the hillside and has the same south-east exposure. Planting density: 6,000 vines per hectare. Age of the vines: 40 years. Integrated viticulture: mechanical working of the soil, reduction of inputs with the "Changins" method, biodynamic trials.
Oenology
Manual harvesting. Selection by plot. Pneumatic pressing of whole grapes. Fermentation in vats and barrels. Ageing period: 18 months.
Suggestions for accompaniment
Seafood - Fish - Japanese cuisine (sushi and sashimi) - Shellfish - Cheese.
Liquid geography
