Chablis Fourchaume La Pièce au Comte 1er Cru, J-C. Bessin - 2020

The warm exposure of La Fourchaume gives us very ripe grapes and wines that are a little rounder than the "classic" Chablis. The acidic balance comes from deep rooting thanks to the work of the soil. The terroir brings elegance, floral and iodine notes, but also a sensual and charming side.

Technique

Viticulture

Surface area: 0.85 hectares. Soil type: Kimmeridgian limestone marl. Location and exposure: located on a hillside in the commune of La Chapelle-Vaupelteigne, the Fourchaume 1er cru benefits from a west-southwest exposure. The plot of "La Pièce au Comte" is one of the oldest on the estate. Planting density: 6,000 vines per hectare. Age of the vines: from 60 to 69 years old. Integrated viticulture: mechanical working of the soil, reduction of inputs with the "Changins" method, biodynamic trials.

Oenology

Manual harvesting. Pneumatic pressing of whole grapes. Slow pressing at low pressure. Vinification and maturation are carried out 100% in barrels. Maturing on fine lees refines the wines for 18 months. A special bottle is dedicated to this wine which symbolises the history of the estate.

Suggestions for accompaniment

Seafood - Fish - Japanese cuisine (sushi and sashimi) - Shellfish - Cheese.

Domain

Jean-Claude and Romain Bessin are discreet winegrowers, leading old vines on mythical plots of land in Chablis, in biodynamic conversion. They produce wines of a rare purity and make their terroirs sing to the sound of the Kimmeridgian, with Fourchaume and Valmur as their highlights! Here the vinification is totally at the service of the grapes: never any woody notes in these wines which age to perfection, with a vibrant tension which carries them very far in the finish. In style, this is the closest thing to Vincent Dauvissat...
