In Burgundy in particular, it is said that you can recognise a great winegrower by the quality of his first vintages. This is certainly the case with this wine, which expresses both tension and richness. Jean-François Germain has produced a fine, subtle Burgundy, in keeping with the family style, that defies the test of time.

Oenology

The vinification is done entirely in oak barrels with relatively little new wood (maximum 20 to 25%). As the cellar is very cold, the fermentations are very long and so is the ageing: at least 18 months. No stirring of the lees (except in 1996 and 2007).

Suggestions for accompaniment

Fricassee of spring mushrooms (mousserons) - Beaufort cheese soufflé - Sea bass with lemon grass.
