Viticulture
A 0.3 hectare plot. Organic farming. The soil is worked by ploughing, followed by spontaneous weeding during the summer.
Oenology
Hand-harvested in small 15 kg crates, with sorting in the vat room. The grapes are pressed for a long time (3 to 5 hours) using whole grapes and no additives (no sulphur, enzymes or yeast). The juice is lightly cold settled for 12 to 24 hours, then fermented under the action of indigenous yeasts in barrels. Aged in 600-litre barrels (no new wood) for 12 months, then 4 to 6 months in stainless steel vats.

Andouillette with mustard sauce - Crispy sea bass with foie gras - Beaufort cheese soufflé - Almond trout.
