Technique
Viticulture
The estate is situated at an altitude of about 300 metres, in the foothills of the Dentelles de Montmirail, and includes numerous terraces. It is now composed of 12 hectares, cultivated according to organic principles. The grapes for this cuvée are picked at full maturity on two different terroirs (80% Trias soil and 20% grey marl).
Oenology
Grapes destemmed and not crushed, gentle manual punching down, indigenous yeasts, matured in concrete tanks, no fining, no filtration.
