Viticulture
Eric de St-Victor has chosen his best terroirs, with Bandolais yields (for the record, less than 35 hl/ha). Indigenous yeasts, good vinification temperature (21/23°), to extract the aromas of the grape variety, not fermented. Late bottling, mid-June. The wine is available for sale in early October.
Oenology
To think of a great rosé is also to think of vinification and maturation, in this case in the same container. A mixed choice was made: one part in 30 hl Franz Stockinger tuns, which makes very little impression, but provides the necessary oxygen; one part in sandstone jars, a noble and not very porous earth which gives brilliance, tension and purity, while remaining perfectly neutral.
Suggestions for accompaniment
It is made to accompany white meats, autumn and winter dishes, while keeping Mediterranean nuances.
