Viticulture
Grown on the volcanic slopes of Mount Vulture, where it was imported by the Greeks seven centuries before Christ, Aglianico produces a tannic red wine that is not without finesse and sapidity. It is one of the most renowned and prestigious appellations in southern Italy. The production area for this wine is limited to the municipalities of Acerenza, Barile and Maschito.
Oenology
The grapes are sorted on the vine in the selected vineyards. The best ones are chosen and then gently de-stemmed and pressed. Pre-fermentation maceration followed by a 15 day fermentation. 60% of the wine is aged in steel vats, the rest in barrels for 10 months, and finally in bottle for 3 months.

Pizza cooked on a wood fire - Penne à la bolognaise - Beef carpaccio with olive oil.
