Viticulture
Tania and Vincent set up their estate in 1999. Their philosophy is simple: focus on growing vines to produce the best grapes possible. Today, the total surface area is around 15 hectares. In the vineyard, the team works mechanically under the rows with natural grass cover. The terroir Le Clos is planted with vines around 60 years old, on clay-limestone soil.
Oenology
Hand-picked. Low yield of 20hl/ha. Vinification in barrels, 20% new wood. Aged for 18 months in 400-litre demi-muids.

Vichyssoise glacé with Bouchot mussels - Sole meunière - Soya tuna. Duck foie gras.
