Clay-limestone soils with finer clays, the latter offer greater inertia and the vine is more stable and less vigorous.
Oenology
Fermentation starts in the vat, then the wine is quickly put into barrels and two months before bottling, the wine is put back into the vat. No additions are made apart from a homeopathic dose of SO2 that is undetectable in the analyses.
