Viticulture
The estate has been in organic conversion since 2013, with the ECOCERT label. Surface area for this cuvée: 1.00 hectare. Number of bottles produced: 5000. Origin of the grapes: Village of Cournou on the Causse (about 320 m altitude). Clay and limestone soil. Average age of the vines: 40 years. Density of vines per hectare: 4500. Yields (hl/ha): 55.
Oenology
Blend of juice from 50% saignée and 50% presses. Fermentation and maturation in a small wine storehouse. Bottled very quickly to preserve the freshness of the wine.
Suggestions for accompaniment
Veal tartar • Pan-fried prawns with Thai spices • Lobster gazpacho with mint.
